Energy bite adventures…

I have been spending some time over the past couple of days experimenting with new energy bite combinations to keep in the freezer. I have tried so many combinations and all have been delicious. The basic idea is that you add something sticky to bind your ingredients together like dates or peanut butter for example and then something dry and nutritious like rolled oats, walnuts, almond meal, coconut or cocoa. You flavour them with your favourite spices and tastes, mix them up until they are able to be formed into balls and that’s it!  In my view they are a perfect snack food. They are easy to make, taste great and contain natural ingredients so are a far better option than the chocolate biscuits and blocks of chocolate I usually eat….so I thought I would share another couple of recipes in case anyone else would like to embark on an energy bite adventure!

Peanut butter energy bites

These are so easy to make and taste delicious. Our girls love them and love that I know exactly what is in them (instead of those snack  bars containing  ingredients that I can’t pronounce).  I started making these before I bought my basic food processor with just a plastic bowl and a wooden spoon to mix the ingredients together and they were just as delicious, although they took longer than the 5 minutes from start to finish that they take now with the food processor.

Ingredients:

2 cups rolled oats

1/2 cup no added salt or sugar smooth peanut butter

1/2 cup dark chocolate chips

1/3 cup honey

A few drops of vanilla extract

Method: Mix everything together apart from the chocolate chips. Add them in and give a final mix to disperse the chocolate chips. Then form into ball shapes with your hands!

Storage: I keep these in the freezer so they last a bit longer. They are too tempting otherwise although you can eat them about 5 minutes after they come out of the freezer.

Peppermint mocha energy bites

I love these as much as I love everything else that is coffee related!

2 cups dates

1 1/2 cups oats

3/4 cup coconut flour ( or the same amount of extra oats)

1/3 cup cocoa powder

1/3 cup ground fresh coffee

A few drops peppermint essence

Method: Mix all ingredients in food processor. Add a splash of water to help the mixture come together if necessary. Form into balls and store in the freezer or refrigerator!
